There’s something incredibly satisfying about growing your own food, and avocados are a particularly rewarding fruit to cultivate, even if it takes a little patience. Today, I want to share my journey of growing an avocado from a simple seed, and then how I love to use these creamy delights right from my kitchen.
The Seedling Stage: A Little Patience, A Lot of Hope
It all started with an avocado pit. After enjoying a perfectly ripe avocado, I saved the seed. The first step is to clean it gently and remove any lingering flesh. Then, I suspended the pit, pointy side up, using three toothpicks so it hung about halfway over a glass of water. The key here is to ensure the bottom half of the pit is submerged.
I placed this setup in a warm spot with indirect sunlight and waited. It took a few weeks, but eventually, a small crack appeared, and a root emerged, followed by a sprout. It’s a slow process, but watching that first root push into the water is pure magic for any gardener!
Once the stem grew a few inches and had some leaves, I carefully transplanted it into a pot with well-draining soil. Avocados love sunlight, so a bright window is ideal. I learned that overwatering is a common mistake, so I let the soil dry out slightly between waterings. My avocado plant is now a happy houseplant, and while it’s still a few years away from producing fruit (growing avocados from seed can take 5-10 years for fruit production, if it ever does!), the journey of nurturing it is its own reward.

This is a classic for a reason. I toast a good slice of sourdough bread until golden. Then, I mash half an avocado with a fork, adding a pinch of salt, a squeeze of lime juice, and a sprinkle of red pepper flakes for a little kick. Spread it on the toast, and maybe add a few microgreens from my garden if I have them. It’s a quick, nutritious, and delicious breakfast or snack.
Creamy Avocado Pasta Sauce
For a healthy twist on pasta, I blend ripe avocado with garlic, lemon juice, fresh basil (also from my garden!), a splash of olive oil, and a little pasta water until smooth and creamy. Toss it with hot pasta, and you have a delightful, no-cook sauce that’s packed with flavor.
